Probably the two fics I've read the most times in any fandom are A Nick in Time by Tira Nog and Theft of Assets, Destruction of Property by Helenish.
I made a long meta/rec post about A Nick in Time HERE, but the gist of it is that this fic (and it's sequel, which I still enjoy but which does not equal or surpass A Nick in Time) allows Harry and Snape to develop feelings for each other without any of the baggage they usually bring to the table. It's a de-aging fic which I almost universally loathe, but I absolutely adore the way Snape being turned into a child allows Ron and Hermione to make him part of their family in a way they never could the adult Snape. My favorite parts of this fic are actually about Ron and Hermione becoming fiercely protective of Snape rather than anything to do with Harry and Snape.
Theft of Assets is Draco/Neville, and it hits so many of my narrative kinks. Draco thinks he's not worthy of Neville; he's depressed and losing his magic. He tries so hard to make their relationship work, and he never knows what Neville is thinking until he finally does. It's just so lovely. Draco's internal monologue is wonderful; I love reading angsty stories with happy endings, and this fits the bill perfectly (although, let's be real, I sometimes wish Draco got a wee bit more abject in this story, but a girl can't have everything).
