Grading just means assessment (I think UK calls it marking); so however you'd score homework or exams or assignments or whatever. Ungrading means that no formal assessment is applied to any assignment in the course.
I actually would not recommend Ungrading (the essay collection I'm reviewing here) as a place to start because it lacks practical how-to advice. If you are interested in the reasons why people stop grading and the research that informs that, this would be a good place to start but not if you want to actually implement it.
