Well, I don't really want to eliminate the middle man either. I mean, I have assisted with animal butchery many times, and it doesn't really bother me or gross me out, but it's just tedious and messy and the bigger the animal is (like a deer), you have to have special equipment or rig something up to do it.

And having a garden saves money except in the way that it eats up your time which is more precious than money in some ways. LOL
