I do agree with you that sometimes Pollan is very pointed in his disagreement, and sometimes he pokes fun at different groups in a way that seems a bit mean-spirited, but on the whole, I enjoy his writing.
I think the idea of artificial meat is a really interesting one. If it actually tastes and smells like the real thing, I think that has a very good chance of becoming a viable alternative. But it's got to taste and smell like the real thing. I love tofu, but the reason it hasn't taken off as a meat substitute for meat-eaters is that it doesn't really taste or smell like meat.
