1. I did not have a stroke, nor do I have meningitis. Instead, I had a headache. A headache. Wow. Okay. At least my doc expressed the proper jealousy that I got to see Daniel Tosh live in Hotlanta while he, sadly, did not.
2. I made the most amazing dinner tonight: a) fennel/spinach soup with a roasted red pepper couli and b) fresh linguine tossed with goat cheese and fresh herbs and topped with a soft boiled egg. Recipes upon request.
3. I kinda want to read this story (courtesy of

4. I want to write this story where Vegas!SGC runs into Dawn Summers. And are duly impressed with her kickassery.
5. I'm sorta writing a sequel to that Giles/Jayne thing. It starts: Mal says, "You ain't got to take up with Jayne, Giles. You earned your spot on this boat free and clear."
6. Emma has been all day without a fever!!!!! She gets to go to school tomorrow. We are all relieved, especially Ems. She has read two Harry Potter books, a Boxcar children mystery, and a Goosebumps; watched TV; played her DS; and seen Voyage of the Dawn Treader (this was before we knew she had the flu). But she misses her friends. And Josh and I get to work. Whoooo! Or wait...

Date: 2011-01-20 08:30 pm (UTC)I took two red bell peppers and halved them, removing seeds and such from the inside. I squashed them down flat, skin side up, on a tinfoil-covered baking sheet and put them under the broiler on on the middle rack for about 20 minutes until they were blackened. (Times may vary per oven) Then I put them in a paper bag for ten minutes to let them cool and then skin start coming unsticked. Then I rubbed off the skin and chopped them up. I put them into a food processor with 1/2 cup Greek yogurt, 1tsp of lemon zest and 1tsp of fresh lemon juice and processed until smooth. Set that aside.
Take two large fennel bulbs with stalks. Cut off the stalks but keep some of the feathery fronds for garnish. Cut the bulbs in half, peel off the tough outer leaves and remove the core. Chop up the bulbs. Chop up two large shallots. Chop up 1 tbsp fresh thyme. Heat up 2 tbsp of olive oil in a Dutch oven or a soup pot. Saute the fennel, shallot and thyme for ten minutes with a sprinkling of salt. Add 2 cups chicken broth (I imagine veggie would be fine as well) and one cup water along with a bay leaf. Bring to a boil; then cover and simmer for 12 minutes. Throw out the bay leaf and stir in six ounces of baby spinach leaves. Immediately remove from heat, cover, and let stand five minutes. Blend everything up and serve the soup (hot or cold) with several spoonfools of the red pepper mixture on top.
So fricking good.
